The cooking time of chops varies according to the chops’ thickness and the meat’s temperature. Here is a guideline for cooking chops according to the preferred doneness.

Well-done: 140+ degrees F

Medium-well: 135-140 degrees F

Medium: 130-135 degrees F

Medium-rare: 125-130 degrees F

Rare: 120-125 degrees F
