You will need around 3 pounds of butternut squash. You can buy them from the farmers market or also from stores. Try to look for medium or large-size squash.

Veggies:

Veggies like garlic and yellow onion will add a great taste to your butternut squash.

Fresh herbs:

Fresh herbs like rosemary and fresh sage will add a great flavour to the squash soup. Herbs add a special texture and aroma.

Vegetable broth:

It will provide a nice base for the butternut soup.

Ginger:

Olive oil:

A tablespoon of olive oil will act as an enriching agent in your butternut soup.

  • Butternut squash: 1 (3 pounds), peel it, remove the seeds and chop in cube shape
  • Yellow onion: 1 large, chopped

  • Vegetable broth: 3-4 cups

Method:-

Now let us get cooking! It will take around 30-40 minutes to make this creamy butternut squash soup.

Start by chopping all the vegetables required. When you are done with the chopping part, heat your soup pot or any large pot.

In the pot, slowly pour about 1 tablespoon olive oil and heat it for a minute. Then add the chopped yellow onion and cook them until the onions change their colour.

Now add salt and pepper and cook them until they have become soft.

After you have achieved your goal, add squash and keep on frequently stirring until they become soft. This process will take around 8 to 10 minutes.

Now add garlic cloves, ginger, fresh sage, and rosemary. Stir occasionally until you start to smell the fragrance. This won’t take long, maximum 1 minute.

After this, add 3 cups of vegetable broth. When the mixture starts to boil, reduce heat and cover the soup pot or your large pot. Cook the butternut squash until it becomes soft and eatable. It can take around 20-30 minutes.

When it’s done, please turn off the flame and let it cool for some time. Then pour the butternut squash soup into a blender and blend it until you find a smooth squash soup. You can also use an immersion blender.

Coconut/ Avocado oil:

A tablespoon of coconut or avocado oil will act as an enriching agent in your butternut soup.

Condiments:

Coconut milk:

  • Ground cinnamon: 1/4 tablespoon
  • Vegetable broth: 2 cups
  • Coconut/ avocado oil: 1 tablespoon
  • Sea salt: 1 pinch
  • Freshly ground black pepper: 1 pinch
  • Coconut milk: 1 14 ounce
  • Maple syrup: 1-3 tablespoon
  • Chilli garlic paste: 1-2 tablespoon

Method:-

Now let us get started with the second recipe. It will take around 25-30 minutes to make this creamy butternut squash soup, and it will serve around 4 people.

Start by chopping all the vegetables required when you are done with the chopping part, heat your large pot or soup pot on medium heat.

When the pot has heated up, add oil, and then after that, add shallots and garlic. Stir frequently for about 2 minutes.

Now add chopped butternut squash to the large pot. Then add condiments, sea salt and pepper & seasoning curry powder and ground cinnamon. Keep on occasionally stirring to coat the butternut with all the seasoning and condiments.

Then for the next step, add coconut milk, vegetable broth, maple syrup, and chilli garlic powder. Chilli garlic powder is optional. You can also use chicken broth in place of veggie broth, which is perfect.

Boil once and then reduce heat to low and cook until the hot soup has cooked completely.

  • Freshly ground black pepper: to taste
  • Butter: 1-2 tablespoons

Method:

Let’s get started with recipe number 3! It will take around 60 minutes to make this creamy butternut squash soup.

Start by preheating the oven at 425 degrees. Place it on parchment paper after coating the butternut with some olive oil of about 1/2 teaspoon each. Also, add salt and pepper to the raw butternut squash.

Turn in between so the squash is cooked perfectly. Once it is cooked, take it out and allow it to cool for some time.

Now in a soup pot or a large pot, heat 1 tablespoon of olive oil. Then add the chopped shallots accompanied with 1 teaspoon of sea salt. Keep on frequently stirring until they turn golden in colour.

When it is done, add minced garlic and frequently stir until you can get its fragrance.
